Peanut Lime Chicken Salad 

A quick and healthy weeknight dinner or workday lunch. Filled with protein, fiber and antioxidants. 

Make ahead prep tip: cook the chicken and chop your veggies on the weekend - you'll have a balanced meal ready in under 10 minutes (perfect for busy days!).

Makes 2 Servings


  •   2 Tbsp peanut butter
  •   2 Tbsp lime juice
  •   1/4 cup water
  •   2 tsp Tamari
  •   2 tsp Sesame oil
  •  1/4 tsp crushed red pepper
  •  1/4 tsp minced garlic
  •  You could definitely add in ginger too!
  •  Combine ingredients above and whisk in a small bowl

Protein & Veggies

  • 8 oz Organic chicken breast (pan fry in olive oil with a dash of pepper)
  • 1 Red bell pepper - sliced
  • 1 Carrot - cut into matchsticks
  • 2 Stalks green onion - chopped
  • 1 Cup cherry tomatoes - halved
  • 3 Cups of your favorite leafy greens

Place your chicken and veggies on a bed of greens and top with the peanut lime dressing. Enjoy!
